Shauna has been working with us at Crossroads Wine and Spirits several years.  A lot of folks also recognize her as one of the great Sushi Chefs at No Coast Sushi.  Both of us agree that cooking at home doesn't need to be complicated.  A lot of is knowing just the right technique for the the task at hand and having a good plan for glazes, sauces and side dishes to peak your senses when you are looking for something beyond the basics.

One of my favorite customers told me the other day that she prefers to serve 16 ounce steaks.  No problem Steaks can be Special Ordered by the 10 lb. box in any size you desire! Stash them in the freezer and defrost them overnight when you want to serve.  Orders placed by 2:00 Wednesday afternoon are delivered the following week!

Fresh vs. Frozen

Current public opinion still tends to sway towards the theory that 'fresh' is always better than frozen, when in reality, a lot of 'fresh' fish sold on the market is up to nine days old. The market has been noticing a growing change though, as more and more people are beginning to realize that 'fresh' isn't always better and isn't always fresh.

The term 'fresh' in the seafood industry implies that the fish has never been frozen, from catch to market to consumer. It has been kept in a chilled state until it ends up with the final consumer, you. In reality, the term Fresh should equate with Quality. Certainly a fish just caught and consumed that same day would be very high in quality if caught from the right waters. Now, if that fish were to set in the refrigerator for 9-12 days, would you still consider that it had the same high quality as the first day it was caught? People will, and should, ask the seafood seller when they received the fish they are considering purchasing.


The California Sea Grant program, a cooperative extension of the University of California offers these consumer tips for purchasing high quality seafood:

Consumers should base their seafood purchases on quality. Frozen
seafood can be superior in quality to fresh products. Many fish and
shellfish are "flash frozen" within hours of harvest. It might take
several days for the same seafood to make it to your local seafood
dealer as "fresh".

This is an example of what GOOD STEAKS DON'T LOOK LIKE!  If you want a steak that tastes good it has to have some marbling or various amounts of intramuscular fat giving it an appearance similar to a marble pattern. Meat with a high marbling content has a taste and texture conesiuers have come to favor. Marbling has a strong beneficial effect on juiciness and flavor and may also have a positive effect on tenderness. Meat which has little marbling may be dry and flavorless.

No Marbling here...looks like the stuff butchers refer to as grass fed organic and to me tastes like cardboard!

Sterling Beef is well marbled and aged for 21 days before they ship it!  It is known as wet aging in the trade and the steaks we sell will continue to age in the cryovac packaging which are good in the refrigerator for 14 days!  I am telling customers that if you have them more than 14 days from the pack date to put them in the freezer and defrost as I have described in the bullet below.  I grilled a couple of the NY Strips for dinner after the Saturday rush in Crossroads Wine & Spirits and had sandwiches with what was left over last night ....believe me when it's Sterling there is no comparison!

Defrosting Meat and Seafood

If you're impatient like me I used to take my flash frozen seafood and place it in a bowl of cold tap water in order to defrost a pound of fish in a hour or two!  The Wild Seafood is so delicious I didn't think much of it till one of my friends suggested I compare my technique to defrosting in the fridge over a day or two! BIG DIFFERENCE! A slow thaw give the fish or meat a chance to absorb the moisture back into the cellular structure of the flesh!  When you defrost slowly there is virtually no difference between it and fresh! It works the same way with steaks and other meats!
