Looking for a better Way!

Outdoor cooking for me is a year round all weather affair.  I am good with skillets and the oven but there is nothing like the taste of food that comes off the grill.

I've been cooking and distributing good gas grills for 12 years but over the last year or so have begun to miss the taste only wood can provide!  After making a study of grills available in the local big box stores and seeing them in use I have determined that the grills formerly made in the USA that set the standard are neaarly a thing of the past.  The trend today was a big shinny beasts made in China, which looks good, have repair issues, tended too have hot spots instead of even heat distribution, don't manage grease well and do not works at all on lower temps. So I set off on and Odyssey looking for a better way.
